Greens-Packed Omelette

Greens-Packed Omelette

A fresh, savoury breakfast that’s as nourishing as it is delicious - loaded with an extra dose of goodness thanks to a scoop of WelleCo’s Super Elixir.

Ingredients:

  • 3 eggs
  • 5-6 cherry tomatoes, diced
  • ½ cup baby spinach (chopped)
  • 1 tsp WelleCo Super Elixir Greens
  • Olive oil or butter, for cooking
  • Salt & pepper, to taste
  • Hemp seeds, to top
Serve with:
  • Handful of rocket
  • 1/2 an avocado
  • Kimchi
  • 2 tbsp cottage cheese

 

Method:

  1. In a bowl, whisk together the eggs, WelleCo Greens, salt, and pepper.
  2. Heat a non-stick pan over medium heat and add a little oil or butter.
  3. Add tomatoes and chopped spinach, sautéing for 1–2 minutes until just softened.
  4. Pour in the egg mixture and swirl to evenly coat the pan.
  5. Cook for 2–3 minutes until the edges begin to set, then sprinkle hemp seeds on top.
  6. Fold over and cook for another minute or so, then serve warm.
