
A fresh, savoury breakfast that’s as nourishing as it is delicious - loaded with an extra dose of goodness thanks to a scoop of WelleCo’s Super Elixir.
Ingredients:
- 3 eggs
- 5-6 cherry tomatoes, diced
- ½ cup baby spinach (chopped)
- 1 tsp WelleCo Super Elixir Greens
- Olive oil or butter, for cooking
- Salt & pepper, to taste
- Hemp seeds, to top
- Handful of rocket
- 1/2 an avocado
- Kimchi
- 2 tbsp cottage cheese
Method:
- In a bowl, whisk together the eggs, WelleCo Greens, salt, and pepper.
- Heat a non-stick pan over medium heat and add a little oil or butter.
- Add tomatoes and chopped spinach, sautéing for 1–2 minutes until just softened.
- Pour in the egg mixture and swirl to evenly coat the pan.
- Cook for 2–3 minutes until the edges begin to set, then sprinkle hemp seeds on top.
- Fold over and cook for another minute or so, then serve warm.
