When Amie Valpone was diagnosed with Lyme Disease, not only did it provide an answer to a 10 year medical mystery, but provided her with the realization that she wasn’t offering her body what it needed to rebuild. After healing herself from Lyme Disease, Amie created The Healthy Apple, sharing her passion for and approach to cleaning eating by focusing on natural, whole food ingredients that nourish the body.

What do you feel has been your biggest professional achievement?

Healing from 10 years of chronic illness including Lyme disease, Pcos, c-diff colitis, leaky gut, hypothyroidism, candida and so much more. I told myself that if I survived, I'd dedicate the rest of my life to inspiring and helping others heal and get to the root cause of their unwanted symptoms and health issues.

What does strength mean to you?

Having the courage to keep going and keeping your head up no matter how bad things get. I also have learned to surrender and stop pushing for everything in life. Everything comes to you when you need it- that's something I've learned this year and it's helped me tremendously. Pushing for something and pushing yourself does nothing but negatively effect your health by stressing you out and making you exhausted.

How does a typical day look?

Waking up, meditating, stretching/light yoga, making breakfast, skin brushing, oil pulling, skyping with my clients all over the world, cooking for my celebrity clients downtown, testing recipes for my website The Healthy Apple, enjoying lunch with my clients, catching up on emails, meeting friends for a night of cooking and relaxing, getting to bed early and relaxing with an Epsom salt bath.

What do you do to unwind?

Epsom salt baths are my favorite ways to detox and relax. In my new book, Eating Clean: the 21-day Plan to Detox, Fight Inflammation, and Reset Your Body, I talk about how our skin is our biggest organ and we have to support our body's ability to detox on a daily basis. These baths are my favorite way to do that!

What are 3 foods you can’t live without?

Avocados, zucchini and almonds.

What would you like to do more of?

Travel abroad. I was too sick for the last 8 years to leave the country but I'm ready to go back to Italy and travel abroad and explore more. It makes me feel alive.

What does wellness mean to you?

Balance. Wellness is not about following the latest trends, dieting, depriving yourself or trying to fit in every workout class. It's about balance. It's about nourishing our bodies with whole one-ingredient foods and healthy fats and lots of fiber from organic fruits and veggies! I've also learned that wellness is more mind/body that we think. Meditation and sitting in silence and learning who we really are and what are thoughts are telling us on a daily basis is one of the best ways to balance our mind and our body. That's wellness to me!

Can you tell me 3 women who you admire:

Mariel Hemingway--she's incredible and i loved her energy the second I met her; she is so kind and loving and nurturing. Same with Christy Turlington- she lights up a room and she is incredible and always giving back. I also admire my mother who has taught me so much these last few years of healing- she is incredible.
